Tomato soup
The ingredients you will need is;
|
HowFirst take olive oil or another neutral cooking oil in a pan and fry the onion over medium heat until it is smooth and soft, but without added color. Towards the end you add the garlic and chilli and let it simmer with. The amount of chili and garlic regulates for taste.
Add the tomato puree and let it saute a couple of minutes. Add the canned tomatoes, crush them lightly with a spatula or another tool, and let the soup boil. Then add the stock and boil again. If you don't have any stock avaliable you can use bouillion cubes. It is important to taste your way to the desired flavor of your soup. Tomato flavor is going to be dominant, and the stock will give additional flavor. Eventually add a little sugar if you want a little more sweetness in your soup. Let the soup simmer until the tomatoes are tender and fine. It takes about 15-20 minutes if you use whole tomatoes. If you use chopped tomatoes cook time can happily be reduced to around 10 minutes if you're in a hurry or very hungry. Cook the soup with a hand blender or another tool, until you get a smooth soup. Add extra water or stock if you think the soup is too thick. Season with freshly ground black pepper and salt. |
